3. Cool to room temp for travel; garnish with parsley.

Ingredients

- 12 oz short pasta (penne/rotini)  

- 1 pint cherry tomatoes, halved  

- 1 cup cucumber, diced

- 1/2 cup feta, crumbled (optional)  

- Olive oil, lemon juice, salt & pepper to dress  

Instructions 

1. Cook pasta al dente, rinse under cold water and drain.  

2. Toss pasta with tomatoes, cucumber, olives, basil and feta.  

3. Dress with olive oil, lemon juice, salt & pepper; chill.
