  5. Preheat the oven to 350°F (175°C). Roll out the dough on a lightly floured surface to about ¼ inch thickness.

Almond Flour Gingerbread Cookies


- 2 cups almond flour

- 2 tbsp coconut flour

- 1 tsp ground ginger

- 1 tsp ground cinnamon

- ½ tsp ground cloves

- ¼ tsp baking soda

- ¼ tsp salt

- ¼ cup coconut oil, melted

- ¼ cup maple syrup

- 1 tsp vanilla extract

- Optional: additional almond flour for rolling


  1. In a large bowl, whisk together the almond flour, coconut flour, ginger, cinnamon, cloves, baking soda, and salt.
  2. In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. If the dough appears too sticky, add additional almond flour, a tablespoon at a time, until it can be easily handled.
  4. Shape the dough into a ball and wrap it in plastic wrap. Refrigerate for at least 30 minutes to allow it to firm up.
  5. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
