Rainbow Fruit Skewers with Honey Yogurt Dip

Ingredients:

  • Strawberries
  • Pineapple
  • Grapes,
  • Melon
  • Blueberries
  • Wooden Skewers

Instructions

  1. Wash and prepare the fruits by cutting them into bite-sized pieces. 
  2. Thread the fruits onto the wooden skewers, alternating colors to create a rainbow effect. 
  3. Serve the fruit skewers on a platter for a colorful and refreshing treat. 

For the Honey Yogurt Dip

Ingredients:

  • 1 cup Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon finely chopped fresh mint (optional)

Instructions:

  1. In a medium bowl, combine the Greek yogurt, honey, vanilla extract, and lemon juice.
  2. Stir well until all ingredients are thoroughly mixed.
  3. If using, fold in the finely chopped fresh mint for an extra burst of flavor.
  4. Transfer the dip to a small serving bowl.

  • Cherry tomatoes  
  • Fresh mozzarella balls

Instructions

  1. Wash the cherry tomatoes and basil leaves. Drain and dry the fresh mozzarella balls. 
  2. Thread one cherry tomato, one mozzarella ball, and one basil leaf onto each skewer. 
  3. Arrange the skewers on a serving platter and drizzle with balsamic glaze. 
  4. Serve the caprese salad skewers as a light and flavorful appetizer. 

Veggie Sushi Rolls

Ingredients:

  • Sushi rice
  • Nori seaweed sheets
  • Assorted vegetables (such as: cucumber, carrot, avocado, bell pepper)

Soy Sauce or Tamari (for dipping)

Instructions: 

  1. Cook the sushi rice according to the package instructions and let it cool. 
  2. Prepare the vegetables by cutting them into thin strips or matchsticks. 
  3. Place a sheet of nori seaweed on a bamboo sushi mat or a clean kitchen towel. 
  4. Spread a thin layer of sushi rice evenly over the nori, leaving a small border at the top. 
  5. Arrange the vegetable strips in a line across the middle of the rice. 
  6. Roll the sushi tightly using the mat or towel, applying gentle pressure to seal the roll. 
  7. Repeat the process with the remaining ingredients. 
  8. Slice the sushi rolls into bite-sized pieces and serve with soy sauce or tamari for dipping. 

Refreshing Watermelon Sorbet

Ingredients:

  • 4 cups of fresh watermelon, cubed
  • 1/4 cup of fresh lime juice
  • 1/4 cup of honey or agave syrup
  • Fresh mint leaves, for garnish (optional)

Instructions:

  1. Place the cubed watermelon in a blender or food processor.
  2. Add the fresh lime juice and honey (or agave syrup) to the blender.
  3. Blend until the mixture becomes smooth and well combined.
  4. Pour the mixture into a shallow dish or baking pan.
  5. Cover the dish with plastic wrap and place it in the freezer for at least 4 hours or until the sorbet is firm.
  6. Once the sorbet is frozen, remove it from the freezer and let it sit at room temperature for a few minutes to soften slightly.
  7. Using a spoon or ice cream scoop, serve the watermelon sorbet into individual bowls or cones.
