This year, we’re mixing up something special and delightfully simple — a Strawberry Mimosa that's as vibrant and refreshing as it is easy to make.

Strawberry Mimosa


  • 2 cups  (1 pint or 12 ounces) fresh strawberries (or frozen strawberries*)
  • 1 cup orange juice
  • 1 750mL bottle Prosecco, champagne or other sparkling wine (and sparkling water for a non-alcoholic version)
  • Optional: A sprig of mint or orange slice for garnish


Begin by hulling your juicy strawberries. The redder and riper, the better for that perfect burst of sweetness.

Puree the strawberries in a blender until smooth. For an extra touch of elegance, strain the puree to remove seeds.

Grab a champagne flute and pour in the strawberry puree, filling about one-quarter of the glass.

Add orange juice until the glass is half full, blending the flavors with the strawberry puree.

  • 1/8 teaspoon pepper
  • 4 cups shredded rotisserie chicken
  • 1-1/4 cups seedless red grapes, halved
  • 1/2 cup chopped pecans
  • 1/2 cup chopped celery
  • 1/4 cup chopped sweet onion, optional
  • Lettuce leaves or whole wheat bread slices, optional


Start by pulling apart your rotisserie chicken into bite-sized pieces. The beauty of rotisserie chicken is its rich flavor and tender meat — perfect for a salad.

Lime-Honey Fruit Salad


  • 1 teaspoon cornstarch
  • 1/4 cup lime juice
  • 1/4 cup honey
  • 1/2 teaspoon poppy seeds
  • 3 medium gala or Red Delicious apples, cubed
  • 2 medium pears, cubed
  • 2 cups seedless red grapes
  • 2 cups green grapes
  • 2 Cups Strawberries
  • 2 Cups Blueberries
  • 2 Cups Mango 
  • Fresh mint leaves for garnish


In a small microwave-safe bowl, combine cornstarch and lime juice until smooth. Adjust the quantities to suit your taste; more honey for sweetness, or more lime for tartness.

Microwave, uncovered, on high for 20 seconds; stir. Cook until slightly thickened, 10-15 seconds longer. Stir in honey and poppy seeds.

Arrange the cut fruits in a large serving bowl.

Drizzle the honey-lime mixture over the fruits and toss gently to coat every piece.

Let the salad chill in the refrigerator before serving, to allow the flavors to meld together.

Garnish with mint leaves just before serving for an aromatic touch.

Mom's Favorite Treat: Spiced Carrot Cake Muffins with Cream Cheese Drizzle

Welcoming the sweet fragrance of the baking of Carrot Cake Muffins—each a little homage to the classic flavors we adore. These aren’t just any muffins; they are the perfect amalgamation of moistness, warmth from a medley of spices, and a playful drizzle of tangy cream cheese frosting. Each muffin is a thoughtful nod to the traditional carrot cake, promising to dazzle the senses and add a dash of elegance to your Mother's Day celebrations. They're not just treats; they're edible expressions of gratitude to the extraordinary women in our lives.

Carrot Cake Muffins


  • 1 ¾ cups [245 g] all-purpose flour
  • ½ cup [100 g] light brown sugar
  • ⅓ cup [67 g] granulated sugar
  • 2 teaspoons cinnamon
  • ½ teaspoon cloves
  • ½ teaspoon allspice
  • ¼ teaspoon nutmeg
  • 2 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ½ cup chopped pecans (or raisins)*
  • 2 eggs
  • 2/3 cup applesauce
  • ⅓ cup vegetable oil
  • ½ tablespoon vanilla extract
  • 2 cups peeled and grated carrots (4 to 5 medium)

For the glaze

  • 3 tablespoons cream cheese
  • ½ cup powdered sugar
  • ½ teaspoon milk


Preheat the oven to 400°F. Spray a standard 12-cup muffin tin with cooking spray or add muffin cup papers.

In a large bowl, whisk the flour, light brown sugar, granulated sugar, cinnamon, cloves, allspice, nutmeg, baking powder, and kosher salt. Stir in the chopped pecans.

In a separate medium bowl, whisk the eggs, then whisk in the applesauce, vegetable oil, and vanilla extract until smooth. Stir in the carrots with a spatula. Add the dry ingredients into the wet ingredients and mix with a spatula until a thick, smooth batter forms. 

Scoop the batter evenly into the muffin cups: the cups will be full to the top. 

Bake the muffins for 23 to 25 minutes, until puffed and golden and a toothpick comes out clean. Cool for 5 minutes in the pan, then transfer to a rack to cool fully, about 1 hour. 

To Make the Glaze

Place the cream cheese in a glass measuring cup or bowl and microwave for about 20 seconds until warm (alternatively, warm it in a small saucepan over medium low heat on the stovetop). 

Stir in the powdered sugar and milk and mix until a drizzlable glaze forms. Use a fork to drizzle it over the muffins. (If making the muffins in advance, store them un-iced and refrigerated; add the drizzle directly before serving.)

*If you love raisins in a carrot cake, you can use them instead of pecans: or use ½ cup of both!

**For an alternative, try this easy Maple Glaze which holds up better during storage.

Eat the muffins immediately. Or store at room temperature in a sealed container lined with a paper towel to absorb extra moisture, about 2 days if iced or 4 days if un-iced. Store refrigerated for up to 1 week or more (allow to come to room temperature before serving). 

The glaze becomes soft during storage**, but it holds its shape. You can also store frozen without glaze for up to 3 months.
